A vigorous F1 bulbing fennel with excellent bolting resistance and uniform, large, round bulbs with tender, sweet anise flavor. Earlier-maturing than older fennel varieties, Preludio delivers consistent quality across spring, summer, and fall plantings. Crisp, aromatic bulbs are outstanding raw in salads, roasted alongside fish, or braised until silky and caramelized.
